Grilled Lemon Herb Salmon with Zucchini Noodles

This low-carb Mediterranean dish combines heart-healthy salmon with fresh zucchini noodles and a lemon herb sauce, making it both nutritious and delicious.

 

Ingredients

   •     2 (6-ounce) salmon fillets

   •     1 large zucchini, spiralized

   •     2 tbsp olive oil (divided)

   •     1 tbsp fresh lemon juice

   •     1 garlic clove, minced

   •     1 tbsp fresh parsley, chopped

   •     1 tbsp fresh dill, chopped

   •     Salt and pepper to taste

   •     Lemon slices for garnish

Instructions

    1. Prepare the Marinade: In a small bowl, mix 1 tablespoon olive oil, lemon juice, minced garlic, parsley, dill, salt, and pepper.

    2. Marinate the Salmon: Brush the marinade onto the salmon fillets and let them sit for about 10-15 minutes to absorb the flavors.

    3. Grill the Salmon: Preheat a grill or grill pan to medium-high heat. Place the salmon on the grill, skin-side down. Grill for 4-5 minutes per side or until the fish is opaque and flakes easily with a fork.

    4. Prepare Zucchini Noodles: In a separate pan, heat the remaining 1 tablespoon of olive oil over medium heat. Add the spiralized zucchini and sauté for about 2-3 minutes, until just tender. Season with a little salt and pepper to taste.

    5. Serve: Place the zucchini noodles on a plate, top with the grilled salmon, and garnish with lemon slices and extra herbs if desired.
