Spinach and Feta Omelet

For a healthy, low carb breakfast a feta and spinach omelet is a must! The myth that eggs raise cholesterol levels has been debunked, so enjoy this nutritious, delicious breakfast!

Ingredients:

2 large eggs

1/2 cup fresh spinach, chopped

2 tablespoons feta cheese, crumbled

Olive oil for cooking (1 teaspoon)

Salt and pepper to taste

 

Instructions:

In a bowl, whisk the eggs with a pinch of salt and pepper.

Heat olive oil in a non-stick skillet over medium heat.

Add chopped spinach to the skillet and sauté until wilted (about 2 minutes).

Pour the whisked eggs over the spinach. Cook for 2-3 minutes, gently lifting the edges with a spatula to allow uncooked egg to flow underneath.

Sprinkle feta cheese on one half of the omelet. Once the eggs are set, fold the omelet in half and serve warm.
